Most likely you have ";live playback"; turned on. This feature records your key velocity as you enter notes using your controller. To turn it off go to Play>uncheck Live Playback. To make sure it gets fully implemented hit ctrl+A to select all first.

You'll also want to go into the Play menu, then Performance. Select Meccanico from the first two drop down boxes. This will stop Sibelius from inserting artificial ";emotion"; into your music.
