I think I already know the answer to this based on reading all of the info I've got but does vdl 2 support the use of a guitar harmonics sound? My instinct is telling me no.

That is correct.  There currently is not support for Guitar harmonics.  You may want to look into a more dedicated sound library like DirecGuitar or Chris Hein Guitar.  Someone else like Jim may be able to offer a different alternative with their expertise.

Indeed this isn't a sound we sampled for the basic guitar patch in VDL. You may be able to lower the Low EQ and raise the High EQ to tweak the sound a bit, but that's certainly not the same thing. A more dedicated guitar library will likely give you more control over this sort of thing.
